Instructions
- Preheat the oven to 350°F (175°C) and line your muffin tin with paper liners.
- Combine the flour, sugar, baking powder, baking soda, salt, and cocoa powder in a large mixing bowl.
- Whisk together the vegetable oil, buttermilk, eggs, vanilla extract, and red food coloring in a separate bowl.
- Pour the wet ingredients into the dry mixture and stir gently until just combined.
- Beat the softened cream cheese and powdered sugar together in another bowl until smooth.
- Fill muffin cups halfway with the batter, add a dollop of cream cheese mixture, then top with remaining batter.
- Mix crumb topping ingredients in a separate bowl and sprinkle over muffins.
- Bake for 18–20 minutes, until a toothpick comes out clean.
- Cool slightly before indulging.
