Ingredients

  • 1 pound ground beef or turkey
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 bell pepper, diced
  • 1 red onion, diced
  • 1 cup corn
  • 12 small tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Toppings: lettuce, tomatoes, avocado, sour cream, salsa

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the ground meat and taco seasoning in a large bowl; mix well.
  3. Spread the meat mixture onto the sheet pan evenly and bake for 10 minutes.
  4. Add bell pepper, onion, and corn to the pan; stir well and bake for another 10 minutes.
  5. Warm the tortillas on the stovetop or in the microwave.
  6. Remove from oven and sprinkle cheese on top, letting it melt.
  7. Serve the mixture on tortillas and invite guests to add desired toppings.
