Instructions

  1. Combine Ingredients: In your slow cooker, layer the chicken thighs, pineapple chunks, sliced bell peppers, and onion.
  2. Mix in the Sauces: Pour in the soy sauce, followed by sugar and vinegar. Sprinkle in garlic and ginger. Stir gently to combine all ingredients harmoniously.
  3. Cook it Up: Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  4. Thicken the Sauce (Optional): Mix cornstarch with a bit of water to create a slurry. Stir into the sauce in the last 30 minutes of cooking.
