- 4 oz cream cheese, softened
- ½ cup shredded sharp cheddar cheese
- ½ cup shredded Monterey Jack cheese
- 2–3 fresh jalapeños, finely chopped
- 2 slices of your favorite bread (sourdough or whole grain)
- Butter, for toasting
Instructions
- In a mixing bowl, combine cream cheese, shredded sharp cheddar, and Monterey Jack cheese.
- Fold in finely chopped jalapeños, mixing until well combined.
- Lay two slices of bread on a clean surface and spread the spicy cheese mixture on one slice.
- Top with the second slice of bread and press down lightly.
- Heat a nonstick skillet over medium heat and butter the exterior of the sandwich.
- Toast the sandwich for 3-4 minutes, checking the underside to avoid burning.
- Flip the sandwich with a spatula and repeat until both sides are golden brown.
- Remove from the skillet, let it cool for a minute, and then slice in half to serve.
