Ingredients

  • 4 oz cream cheese, softened
  • ½ cup shredded sharp cheddar cheese
  • ½ cup shredded Monterey Jack cheese
  • 23 fresh jalapeños, finely chopped
  • 2 slices of your favorite bread (sourdough or whole grain)
  • Butter, for toasting

Instructions

  1. In a mixing bowl, combine cream cheese, shredded sharp cheddar, and Monterey Jack cheese.
  2. Fold in finely chopped jalapeños, mixing until well combined.
  3. Lay two slices of bread on a clean surface and spread the spicy cheese mixture on one slice.
  4. Top with the second slice of bread and press down lightly.
  5. Heat a nonstick skillet over medium heat and butter the exterior of the sandwich.
  6. Toast the sandwich for 3-4 minutes, checking the underside to avoid burning.
  7. Flip the sandwich with a spatula and repeat until both sides are golden brown.
  8. Remove from the skillet, let it cool for a minute, and then slice in half to serve.
