Ingredients

- 1 ripe pineapple, diced
- 2 fresh jalapeños, finely chopped
- 1/2 cup red onion, finely chopped
- 1/4 cup brown sugar
- 1/2 cup apple cider vinegar
- 1 teaspoon garlic, minced
- Salt to taste
- Juice of 1 lime
Instructions
- Combine the diced pineapple, chopped jalapeños, red onion, brown sugar, apple cider vinegar, minced garlic, and lime juice in a medium saucepan. Stir well.
- Cook over medium heat, stirring occasionally until the mixture comes to a gentle simmer.
- Lower the heat and allow the chutney to cook for about 15-20 minutes, stirring occasionally until thickened.
- Taste and season with salt as desired.
- Remove from heat and allow to cool before serving.
Notes
Chutney tastes better after resting in the fridge for a day. Adjust spiciness by altering jalapeño quantity.
