Ingredients

  • 1 ripe pineapple, diced
  • 2 fresh jalapeños, finely chopped
  • 1/2 cup red onion, finely chopped
  • 1/4 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1 teaspoon garlic, minced
  • Salt to taste
  • Juice of 1 lime

Instructions

  1. Combine the diced pineapple, chopped jalapeños, red onion, brown sugar, apple cider vinegar, minced garlic, and lime juice in a medium saucepan. Stir well.
  2. Cook over medium heat, stirring occasionally until the mixture comes to a gentle simmer.
  3. Lower the heat and allow the chutney to cook for about 15-20 minutes, stirring occasionally until thickened.
  4. Taste and season with salt as desired.
  5. Remove from heat and allow to cool before serving.

Notes

Chutney tastes better after resting in the fridge for a day. Adjust spiciness by altering jalapeño quantity.
