- 2 cups fresh strawberries, pureed
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 eggs

- 8 oz cream cheese, softened
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for whipping cream)
Instructions
- Preheat the oven to 350°F (175°C) and prepare two 9-inch round pans by greasing them.
- Mix the dry ingredients: whisk together the all-purpose flour, baking powder, and salt in a large bowl.
- Cream the butter and sugar together until light and fluffy, then add the eggs and vanilla extract.
- Combine the wet and dry ingredients by alternating flour and strawberry puree until just combined.
- Bake for 25-30 minutes or until a toothpick comes out clean; cool in pans for 10 minutes before transferring to a wire rack.
- Prepare the cheesecake layer by beating the cream cheese until smooth, then beat in the powdered sugar and vanilla.
- Whip the heavy cream until stiff peaks form and spread over the cheesecake layer.
- Assemble the cake by layering the second cake on top, frosting the sides and top with whipped cream.
- Chill for at least one hour before serving.
Notes
For a quicker version, use store-bought strawberry puree. Avoid overmixing the batter to prevent a dense cake.
