Ingredients

- 4 salmon fillets
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup baby spinach
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
- Heat the olive oil in a non-stick skillet over medium-high heat.
- Season the salmon fillets with salt and pepper, then carefully add to the skillet, cooking for 4-5 minutes per side.
- Remove the salmon and place it on a warm plate.
- Add minced garlic to the skillet and sauté for about 30 seconds.
- Introduce the sun-dried tomatoes and spinach, cooking for around 2 minutes until the spinach wilts.
- Pour in the heavy cream, stirring gently and bringing to a simmer.
- Stir in the grated Parmesan cheese and let it melt completely.
- Return the salmon to the skillet, spooning the sauce over it and cooking for another 2 minutes.
- Garnish with fresh basil if desired and serve hot.
Notes
Serve with lemon risotto, garlic mashed potatoes, or a light salad for a complete meal. Leftovers can be stored for up to 2 days in the refrigerator.
