These Valentine’s Day Cookie Cups are a delightful treat that combines a soft, chewy cookie base with a rich, creamy filling. Each bite offers a perfect balance of sweetness and texture, making them an irresistible dessert for your loved ones.

Ingredients

Scale
  • For the Cookie Cups:
    • 1 cup unsalted butter, softened
    • 1 cup granulated sugar
    • 1 cup brown sugar, packed
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 3 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
  • For the Creamy Filling:
    • 1 cup cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1/4 cup heavy cream
    • Red and pink sprinkles for decoration

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Grease a muffin tin and scoop about 2 tablespoons of cookie dough into each cup, pressing down slightly to form a cup shape.
  7. Bake for 10-12 minutes or until the edges are golden brown. The centers should look slightly underbaked.
  8. Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
  9. For the filling, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Gradually add the heavy cream and beat until fluffy.
  10. Once the cookie cups are cool, fill each cup with the creamy filling and top with sprinkles.
