Ingredients
Scale
- For the Cookie Cups:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- For the Creamy Filling:
- 1 cup cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- Red and pink sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Grease a muffin tin and scoop about 2 tablespoons of cookie dough into each cup, pressing down slightly to form a cup shape.
- Bake for 10-12 minutes or until the edges are golden brown. The centers should look slightly underbaked.
- Remove from the oven and let cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- For the filling, beat together the cream cheese, powdered sugar, and vanilla extract until smooth. Gradually add the heavy cream and beat until fluffy.
- Once the cookie cups are cool, fill each cup with the creamy filling and top with sprinkles.
