- For the Vanilla Custard:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 1 tablespoon vanilla extract
- 2 tablespoons unsalted butter
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs.
- Gradually add cold water, mixing until a dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
- Roll out the dough on a floured surface and cut into rectangles. Wrap each rectangle around a cannoli tube.
- Place the wrapped tubes on a baking sheet and bake for 15-20 minutes or until golden brown. Remove and let cool.
- In a saucepan, heat milk over medium heat until steaming. In a separate bowl, whisk together sugar, cornstarch, and egg yolks.
- Slowly pour the hot milk into the egg mixture, whisking constantly. Return to the saucepan and cook over medium heat until thickened, about 5-7 minutes.
- Remove from heat, stir in vanilla extract and butter. Let the custard cool completely.
- Once the pastry shells are cool, carefully remove them from the tubes and fill with the vanilla custard using a piping bag.
- Dust with powdered sugar before serving.

- Make-ahead: The pastry shells can be made a day in advance and stored in an airtight container.
